Organic farming is a production method that is defined and regulated at Community level by Regulation EC 834/07, and the Implementing  regulation EC 889/08 and nationally by D.M. 220/95.

In organic farming are not used synthetic chemicals (fertilizers, herbicides, fungicides, insecticides, pesticides in general), neither Genetically Modified Organisms (GMOs).

Natural fertilizers such as manure and other composted organic material (cuttings, etc.) and green manure are used: they incorporate plants into the ground especially sown, like clover or mustard.

If it is necessary to intervene to protect crops from parasites and other adversities, the farmer may have recourse solely to the substances of natural origin and expressly authorized by European Regulation (on the basis of the so-called "positive list").
