Sicilian Cultivar, typical of the eastern area. The most important centres of cultivation of this variety are in the area of the Iblei mountains, in the province of Syracuse with the municipalities of Cassaro, Buccheri, Ferla and Palazzolo Acreide and the province of Ragusa with Chiaramente Gulfi.

Tonda Iblea plant, like the Marmurigna, is grown at a height above sea level up to 550/600 meters; This position, along with the exposure, naturally inhibits the so-called "olive fly" attack and therefore we do not have to use pesticides, making the oil totally organic. Another feature of the area is that there are minimal changes in temperature and also soils have  optimal drainage because they are shallow, medium consistency, rich in lime and divided in terraces from drywall.

Tonda iblea plant is quite vigorous, with spreading form and fruiting twigs. The leaves are lanceolate in shape, small and narrow, greenish-gray opaque on the top side. The drupe (fruit), round shaped, is medium-large sized (between 5 and 8 grams).

The Tonda Iblea, having always been table olive, have been squeezed for some time now.

The obtained oil is an oil that tastes of Sicily, silky and pleasantly flavorful, rich in all the aromas of the Iblei mountains. It has a medium to intense fruitiness, with predominance of the spicy over the bitter. Typical is the smell of grass and green tomato. As soon as you open the bottle, you can understand that it is an exceptional oil because it emits scents that you cannot find in other oils.

It has a green-gold color, low sourness and it is rich in polyphenols. You can taste it preferably raw on cooked vegetables, salads, bruschetta, roasted meats, fish dishes and legumes. A real local squeeze of land.
