The collection ranges from early October to mid-November when the olives have reached the correct ripening, that is early maturity (we collect the olive still green to get a higher quality even if the oil yield is less). It is by "stripping", which consists in removing by hand the olives from branches by means of stairs (this is the traditional harvest).

Abbacchiatore

From 2009 we introduced a mechanical helper: it's a mechanical olive harvester with an extendable arm and two combs that replace the hands. This method allows us to speed up the collection without damaging the olives.

 

 

 

 

Convogliare oliveFinished one tree we pass to the next. Meanwhile two of us convey the picked olives in the middle of the nets and make an initial hand defoliation. The olives are placed in ventilated chests and let in the shade under the tree.
